Comforting and flavorful Moroccan Harira soup!
t's a hearty and nutritious soup made with a combination of lentils, chickpeas, tomatoes, and various herbs and spices
Harira soup is a traditional and beloved dish in Moroccan cuisine, often enjoyed during Ramadan and other special occasions
Harira Soup
1 can of chickpeas
100 g green lentils
1 onion
40 g coriander
40 g flat leaf parsley
2 celery sticks
2 tomatoes
1 cm piece of ginger root
100 g tomato paste (pure)
60 g vermicelli/ crushed spaghetti
1 cube of vegan stock
1 heaped teaspoon of flour
2 teaspoon cinnamon
2 teaspoon turmeric
2 teaspoon of cumin powder
olive oil (optional)
Directions
1. Add lentils and water in a pot and cook for about 15-20 minutes
2. Heat oil in large pot over medium heat or user water frying method. Add onion and ginger and sauté for 3-4 min. Add chopped celery sticks and sauté for another 3- 4 minutes
3. Add all the spices, stir in chopped tomatoes and continue to simmer for another 3-4 minutes
4. Add broth and bring to boil
5. Stir in lentils, chickpeas and tomato pure
6. Place flour in a small bowl. Take few spoons of the liquid from the soup and add the flour. Mix well until there are no lumps. When adding flour to soups it is always a good idea to use this technique to ensure there are no lumps in the soup. Cook for another 3 minutes
7. Add vermicelli/ spaghetti and cook for another 5 minutes
8. Serve with lemon wedges
