There are so many recipes for vegan cheeses, yet it's not easy to find nut free recipes. This flavoursome vegan potato pepper jack cheese is made from humble potatoes.
Yes, it's absolutely nut free, yes creamy and delicious. You can slice it to serve on sandwiches, cheese board or just on it's own as a snack.
❖ Ingredients
➢ 110g boiled white potatoes
➢120ml water
➢Fresh red chili (1cm strip)
➢ Few green olives
➢ 25g nutritional yeast
➢ 2 tablespoons coconut oil
➢ 7g agar agar powder
➢ 1 tablespoon of apple cider vinegar
Method
1. Blend all ingredients until really smooth
2. Pour the mixture into a saucepan and cook over low heat (do not bring to boil),stirring constantly, for about 5-7 minutes. During this time, the mass will thicken up.
3. Add chopped pepper, chili flakes and green olives.
4. Pour the finished cheese mass into a glass bowl or a selected one container, cool the cheese in the refrigerator after it has cooled down for at least 2-3 hours
