Rich, creamy and satisfying curry without any dairy. This Cauliflower Peanut Curry can help turn humble cauliflower and chickpeas into explosion of flavours
Cauliflower Peanut Curry
2 cloves of garlic minced
thumb of ginger , finely chopped
2 tablespoon red curry paste
1 tin of chickpeas or 250 cooked chickpeas
1/2 head of cauliflower, break into florets
250 ml of coconut milk
2 tablespoons of peanut butter
1 tablespoon of soya sauce (tamari if you are gluten free)
1 lemon
Directions
1. Using water frying method fry onion until translucent
2. Add garlic and ginger and sauté for about 4, 5 minutes
3. Add curry paste and coconut milk with splash of water.
4. Stir in cauliflower and cook for approximately 8 minutes, until cauliflower is sem-soft, al dente.
5. Add in peanut butter, soya sauce/tamari with some water, cook for another 2, 3 minutes
6. Taste, if too thick, add some water, if too think stir in another spoon of peanut butter.
7. Squeeze some lemon juice. It's Great with brown rice or quinoa for a full protein packed plant based meal.
