Nourish Loaf

  • 1 cup cooked lentils

  • 1 cup cooked quinoa

  • 1 cup gluten-free rolled oats

  • ½ cup sunflower seeds

  • ¼ cup ground flaxseed

  • 2 tbsp psyllium husk

  • 2 tbsp nutritional yeast

  • 1 tbsp tamari

  • 1 tbsp olive oil

  • Spices: 1 tsp each salt, black pepper, smoked paprika

  • ½ tsp turmeric,

  • 1 tsp dried herbs (e.g. thyme/oregano)

Vegetables (finely diced & sautéed):

  • 1 small onion, 2 garlic cloves

  • ½ cup carrot, ½ cup bell pepper

  • ¼ cup sun-dried tomatoes


Directions

  1. Mix lentils, quinoa, oats, seeds, flaxseed, psyllium, nutritional yeast & seasonings.

  2. Combine veg into dry mix. Add tamari & olive oil. Mix into a thick dough.

  3. Press into lined loaf pan. Top with herbs or seeds.

  4. Bake at 180°C (350°F) for 50–60 mins. Cool completely before slicing if serving cold
