Nourish Loaf
1 cup cooked lentils
1 cup cooked quinoa
1 cup gluten-free rolled oats
½ cup sunflower seeds
¼ cup ground flaxseed
2 tbsp psyllium husk
2 tbsp nutritional yeast
1 tbsp tamari
1 tbsp olive oil
Spices: 1 tsp each salt, black pepper, smoked paprika
½ tsp turmeric,
1 tsp dried herbs (e.g. thyme/oregano)
Vegetables (finely diced & sautéed):
1 small onion, 2 garlic cloves
½ cup carrot, ½ cup bell pepper
¼ cup sun-dried tomatoes
Directions
Mix lentils, quinoa, oats, seeds, flaxseed, psyllium, nutritional yeast & seasonings.
Combine veg into dry mix. Add tamari & olive oil. Mix into a thick dough.
Press into lined loaf pan. Top with herbs or seeds.
Bake at 180°C (350°F) for 50–60 mins. Cool completely before slicing if serving cold
