Vegan Gluten Free Scones
250g green bean flour
100g rolled oats blitz into flour
50g oats
2 tablespoon of apple cider vinegar
100ml soy milk
4 big red onion thinly sliced
2 tablespoon miso paste
1 tablespoon mustard
2 teaspoon garlic powder
1 teaspoon baking powder
2 teaspoon of maple syrup
3 tablespoon of nutritional yeast (optional)
handful of sunflower seeds
Directions
1. Fry sliced onions. After 10 minutes add maple syrup to help with the caramelization process. To keeping the onions from drying out as they cook is to add a little water to the pan. Let the onions cook for 30 minutes, stirring every few minutes. When onions start sticking to the pan, let them stick a little and brown and add a little bit of water.
2. Add miso paste to caramelised onion and ensure all mixed well together. Set aside
3. Preheat the oven to 200C
4. In a large mixing bowl, combine the green bean flour, oat flour, oats, garlic powder , baking powder and baking soda and nutritional yeast if using any.
5. In a separate bowl mix milk, apple cider vinegar, mustard.
6. Slowly pour the wet ingredients into the dry and gently mix everything together.
7. Add in caramelised onion, then gently fold them through the batter.
8. Evenly distribute the batter throughout the baking form. Sprinkle the sunflower seeds , and press them in.
9. Bake the scones in the oven for 25-30 minutes, until they are golden. Allow to cool fully before eating.
